The harsh environment of the Moroccan desert, with its scorching summer temperatures, rocky soil, and limited water resources, is the backdrop for Atlas Olive Oils' production. Paradoxically, these challenging conditions lead the olive trees to produce an abundance of polyphenols, particularly hydroxytyrosol, as a survival mechanism. This results in an extraordinary antioxidant profile in the resulting EVOO.
Atlas Olive Oils has carefully curated its production process to ensure the highest standards of organic, sustainable, and ethical practices. The company's olive groves are located in the Marrakech region, spanning 245 hectares (605 acres) at an altitude of 390 meters above sea level. The soil composition is a well-balanced mixture of clay, muddy/loamy, and sandy elements.
Depending on the orchard, the olive trees are pruned either into cups or hedges, with varying tree densities. The older bicentenary orchard produces 25,000 liters of EVOO with a maximum acidity of 0.4°, while the modern orchard yields 450,000 liters with a maximum acidity of 0.2°. Harvesting takes place from late September to late December, and the olives are cold-pressed at a maximum temperature of 26°C using a two-phase continuous system.
The resulting EVOO from Atlas Olive Oils is renowned for its exceptional quality and diverse flavour profiles. The "Atlas" variety exhibits aromas of red tomato, ripe banana, and apple, with a taste of culinary herbs, cucumber, and apple. The "Les Terroirs de Marrakech" showcases notes of greenery, cut grass, and apples, with a taste of hedge clippings and almonds. The "Desert Miracle" offers a sweet and delicate style, with aromas of almonds, basil, and sweet banana, and a taste of artichoke and hazelnut chocolate.
